The use of lactic acid bacteria (LAB) as starter cultures in fermentation processes is influenced by their ability to survive antibiotic exposure, particularly in raw materials that may contain antibiotic residues. This study aimed to evaluate the response of LAB isolates obtained from Saanen goat colostrum to several antibiotics and to identify potential isolates as starter culture candidates. The test was conducted using the paper disk diffusion method against four types of antibiotics, namely amoxicillin, cefadroxil, cefixime, and ciprofloxacin. The observed parameter was the diameter of the inhibition zone, which was used to determine the resistance, intermediate, and sensitivity categories of each isolate. The results showed that LAB isolates exhibited varying responses to each tested antibiotic. Amoxicillin and cefadroxil tended to produce larger inhibition zones, indicating that most isolates were categorized as sensitive. Different responses were observed for cefixime and ciprofloxacin, where several isolates showed higher levels of resistance. This variation indicates differences in the physiological and genetic characteristics of each isolate in responding to antibiotic pressure.
