Pengaruh Dosis Asap Effect of Liquid Smoke Dose and Storage Time on Duck Egg Quality

Abstract

This study aims to eval_uate the effect of liquid smoke dose and storage time on the quality of duck eggs. The study used a Complete Random Design (RAL) factorial pattern with two factors. Factor A is the dose of liquid smoke (0%; 2.5%; 5.0%; and 7.5%), while Factor B is the storage time (0, 7, 14, and 21 days). The parameters observed included total bacterial colonies, yolk index, egg white index, Haugh Unit, and air cavity. The data was analyzed using multiple analysis (ANOVA) and continued with further tests. The results showed that there was a real interaction (P<0.05) between the dose of liquid smoke and the storage time on the egg white index and total bacterial colonies. A 7.5% liquid smoke dose treatment with a storage time of 21 days resulted in the lowest egg white index and total bacterial colonies. Partially, the dose of liquid smoke and the storage time had a significant effect (P<0.05) on the egg yolk index in the absence of interaction. The dose of liquid smoke has a real effect on the air cavity, while the storage time has a real effect on the Haugh Unit, where the longer the storage time leads to a decrease in the value of the Haugh Unit. It was concluded that the use of liquid smoke could maintain the quality of duck eggs during storage.
